I love this time of year. When the seasons change from summer to fall – its like the earth wraps us all in a big cozy hug.
The energies begin to slow down a little and we begin to desire warm mugs of tea and soup.
I love soups : )
Here is an easy and simple soup that will keep you satisfied and healthy throughout your winter months.
Healing Miso Soup
- 2 cups Veggie broth
- 2 cups water
- 1 yellow onion
- 2 carrots
- 4 small Yukon potatoes
- 4 stocks celery
- 3 large cloves garlic
- 1 medium zucchini
- 3 – 4 tbsp miso paste
- 2 tsp each: Oregano & thyme
- 2 Bay leaves
Chop and dice the onion, carrot, potatoes, celery, garlic, and zucchini.
In a large soup pot, warm 1 tbsp oil and add onion, carrot, and celery. Cook until soft.
Add the garlic and potatoes. Cook for 1 minute.
Add the broth and spices. Cook until potatoes are tender – 15 – 20 minutes.
Add in the zucchini.
Using a small ladle, scoop some of the warm broth into a bowl. Add the miso and stir until smooth. Add mixture to the soup.
Warm through and salt as desired.
Ladle into your favorite bowl and enjoy!
* feel free to add chickpeas and or rice if you’d like to bulk it up.
