Here is a budget friendly plant based recipe that is quick and easy to make. It is healthy and tasty and sure to please. If you are looking to have a few plant based budget meals in your back pocket this is sure a good one to have. The sorghum is filling and gives energy while the cucumber and tomato are light and cooling. This is a cook once eat multiple times meal so great for those who are busy. I hope you enjoy this budget friendly plant based recipe.

Sorghum Tabbouleh Recipe
Makes approx. 5 servings Prep time: 30 minutes
1 cup sorghum
2 cups parsley, chopped
1 cup tomatoes, diced
1 cup cucumber, diced
1 can green olives, chopped
1/4 cup red onion, diced
Dressing:
1/2 – 1 lemon juiced
1 tbsp olive oil
pinch of salt
Directions:
- Start by rinsing your sorghum in cool water.
- Cook your sorghum either on the stove – or in a pressure cooker until cooked through. Use the instructions of your pressure cooker to know how long – mine took about 25 minutes. On the stove it is more like 45 minute.
- While your sorghum is cooking chop and dice the remaining ingredients – add them to a bowl.
- When the sorghum is done cooking – run it under cool water to cool it down. Then add to our bowl of veggies.
- When you’re ready to eat – add your dressing by drizzling with lemon juice, oil, and a sprinkle of salt.
- Stir everything together
