What’s better than a warm hearty soup with ghosts in it around the Halloween time of year?
This is a whole food plant based mushroom and rice soup with a halloween twist. We use celery, carrot, tomato, green peas, potato, mushrooms, leek, and spices to make this soup everything it is. I hope you enjoy and have fun making this halloween themed plant based recipe in your kitchen.
Ghastly Ghost Soup
Makes: 4 serv Total time: 30 – 45 minutes
2 carrots diced ( cut into pumpkin shapes if you’d like )
2 medium sized potatoes ( yukon or red )
3 ribs of celery, diced
1 small leek, diced
3 – 4 gloves garlic, minced
10 white button mushrooms
3/4 cup brown rice
1 can fire roasted diced tomatoes
1 can tomato sauce
2 tsp dried rosemary
1 tsp dried thyme
1 cup frozen green peas
4 cups vegetable broth
pinch of salt & pepper
squeeze of lemon
Directions:
- Start by chopping your celery, carrot, leek, garlic, and potato.
- Add 1 tbsp of oil into a big soup pot. Turn the stove to medium low.
- Add your chopped veggies to the pot of warm oil and let sizzle until they begin to soften. Add 1/4 cup of vegetable broth as needed to prevent sticking.
- While those are cooking open your cans of tomato sauce and diced fire roasted tomatoes. Once the veggies have softened partially add both cans of tomatoes along with the rice, remaining vegetable broth and spices.
- Let cook until the veggies are completely soft and the rice is cooked through.
- Meanwhile – prepare your ghost mushrooms by slicing them in half and using a straw to cut eyeball holes into the mushroom caps.
- Once the rice and veggies are all cooked through add your mushrooms and green peas. Warm through for about 3 minutes.
- Your soup is now ready! Ladle into your favorite bowl and drizzle with a squeeze of lemon on top.
