This is a simple vegan dessert recipe that knocks it out of the park!
It only takes about 20 minutes to prepare, uses only whole food ingredients, and is out of this world good.
Apple Pie Recipe
Makes 1 standard pie Prep time: 15 – 20 minutes Optional Baking time: 15 minutes

Crust / Topping:
1 cup oats
3/4 cup oat flour
1/2 walnuts
1/4 chia seeds, optional ground
1/4 tsp cardamom
1/4 tsp clove
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/2 cup coconut sugar
7 dates, pitted, chopped
1/2 cup coconut oil
Filling:
3 large sweet apples, sliced
1/4 cup maple syrup
1/3 cup coconut sugar
1/2 tsp cinnamon
Directions:
- In a food processor or blender, combine all topping ingredients. Blend until crumbly and forms into a ball. Set aside 1/2 of the crust for the topping.
- Press crust into a standard pie pan. No need to oil the pie pan. Press firmly making sure to bring the crust up the sides of your pie.
- Combine all filling ingredients into a bowl and gentle mix with hands to coat the apples in sugar and cinnamon.
- Arrange your coated apple slices into your crust. If baking your pie, add extra apple as they will cook down.
- On top of your apples, sprinkle your topping you set aside.
- If baking, place in an oven at 350F for about 15 minutes.
- If leaving raw, place in your fridge for about an 1hr to solidify the coconut oil before slicing.
- When ready to serve, cut slices and enjoy!
