If you are looking for a homemade, whole food, plant based, tasty taco recipe look no further. This is a plant based Taco recipe that is SO GOOD.
It is plant based, vegan, really easy to make, quick, full of nutrition, delicious, requires minimal ingredients, and is very filling.
Taco Recipe
Makes approx. 5 tacos Prep time: 15 – 20 minutes

4 – 5 bok choy leaves – taco shell size
1 cup hummus – plain or roasted red pepper ( recipe below )
3/4 cup bean, black bean or cannellini bean
3 potatoes, diced & sauteed
1 avocado, sliced
1/4 cup basil leaves, sliced
1/2 cup green beans, cut
1/4 cup purple dragon beans, cut
1/2 cup bok choy stems, diced
1/2 cup Fully Raw Kristina’s Sweet & Spicy Mango Dressing
Plain Hummus Recipe:
2 cups garbanzo beans, cooked
2 tbsp tahini
2 cloves garlic
2 tsp cumin
1 tsp paprika
1 lemon, juiced
pinch salt
more tahini or water as needed for consistency
Directions for hummus:
- Add all ingredients into a food processor or high powered blender
- blend until a smooth consistency adding either more tahini or water if needed
Directions for Tacos
- make hummus ( or purchase store bought )
- make Sweet Mango Dressing
- Dice and cook potatoes until soft
- While potatoes are cooking – chop remaining veggies
- To assemble:
- on a bok choy leaf spread a spoonful or two of hummus
- add some potatoes, then beans, bok choy, green beans, dragon beans, basil, and avocado.
- drizzle the mango dressing over the top and enjoy ๐
