I love staple recipes. I also love variety. So to mesh the two, let’s take the Chia Pudding staple, and add in some pumpkin to get it a Fall season feel.
Chia pudding is pretty quick and simple to make. You just want some chia seeds, your liquid of choice, and some yummy spices. For this recipe the stars of this show are turmeric, cinnamon, and nutmeg. Here are some cool things you might not have known about these spices.
Turmeric – anti inflammatory
Cinnamon – anti: bacterial, fungal, inflammatory, viral. Relieves menstrual cramping.
Nutmeg – digestive aid
Let’s have some fun and make this recipe.
Pumpkin Chia Pudding Recipe
Makes 2-3 serving Prep time: 3 min Total time: 15 min

Smoothie base:
3/4 cup chia seeds
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp turmeric
3 tbsp pumpkin puree
4 cups cashew milk ( blended with 2 dates )
Topping:
coconut shreds
pistachios
raspberries
Directions:
- Measure out your chia seeds into a mason jar, or container of choice.
- Add the spices on top of the chia seeds. Give it a swirl to mix the spices with the seeds
- Add the pumpkin puree on top.
- Then add in your plant milk. Fill the jar 3/4 full and use a knife, spoon, or chop stick to stir it together.
- Then fill the rest of the jar with the remaining plant milk.
- Place the lid on the jar, and close tightly.
- Then shake the jar while you do a little dance around the kitchen.
- Place your pumpkin filled jar on the counter for 5 minutes.
- Then come back and give it another shake, plus dance. Repeat one more time ( or as many times as desired ).
- Once your chia seeds have plumped up completely its time to open that jar and pour your newly made pumpkin chia pudding into your favorite bowl.
- Add whatever toppings you desire and Enjoy!!!
