Winter is upon us where I live which means winter squashes are coming in abundance. I love this time of year so much and I love Spaghetti Squash.
This is a very quick, easy, and simply plant based whole food recipe you can make at home that will fill up your belly.
Chickpea Spaghetti Squash Pasta Recipe
Makes 1-2 servings Prep time: 30 min Total time: 15 min

Ingredients:
1 Large Spaghetti Squash
1 – 2 cups Marinara Sauce of Choice ( look for whole ingredients and avoid / limit processed oils, refined sugars, and preservative )
1 cup chickpeas ( dried or canned )
Basil – optional
Coconut oil, salt, pepper
Directions:
- If using dried chickpeas – soak in fresh water overnight
- Preheat your oven to 425F
- Drain your soaked chickpeas and rinse. Then place in a pressure cooker with water to cover and cook according to your pressure cookers instructions.
- Slice the stem end off your spaghetti squash, then slice in half
- Remove the seeds inside ( save your seeds for your garden next year ! )
- Rub a little coconut oil on the insides of your squash, then sprinkle with salt, and pepper.
- Place cut side down on a cookie sheet lined with parchment paper or a silpat. Cook for 30 minutes
- Meanwhile – go to the park or do a little dance. : )
- A few minutes before the chickpeas are done and oven is done, warm your sauce on the stove.
- Remove your squash from the oven and using a fork, lift out the spaghetti squash from its shell and place in a bowl.
- Cover with warmed sauce.
- When chickpeas are done in the pressure cooker drain any extra water. Then sprinkle some chickpeas on top of your pasta.
- Chop some basil and sprinkle on top then enjoy!!!
