The freshness and aliveness of raw foods is incredible.
Pair that with the juiciness of carrots, the depth of cinnamon, and sweetness of dates and you have a spectacular combo.
This is my take on the well known carrot cake, just made raw.
It is easy, simple, just as delicious if not more, and comes together in just a few minutes.
This is a finger licking, soul in love, joyous treat that I’m sure you’ll love.
Recipe
Makes 13 cupcakes
Prep time: 10 min Total time: 40 min

Ingredients:
For the Base:
4-5 cups carrot pulp ( leftover from juicing carrots, or finely grated carrots)
3 cups dried figs
2 cups raisins
2 cups medjol dates, pitted
1 tbsp grated ginger
2 tsp cinnamon
1 tsp vanilla extract
1 tsp pink Himalayan salt
For the Frosting
3 cups soaked cashews
5 soaked dates
1/2 lemon juiced
1 tsp cinnamon
small pinch of nutmeg
coconut water as needed
coconut oil if needed to thicken
Directions:
- soak cashews and dates in filtered water
- Juice 2-3 pounds of carrots and save the pulp. Alternatively grate carrots to yield 4-5 cups
- Chop dried figs and dates into smaller pieces.
- Add all base ingredients into a food processor or high speed blender. Process until combined
- Transfer to a bowl
- Using a standard cupcake tin ( lined or not ) gather rounds of the mixture into your hands, create a ball, and press into cupcake round. Fill the round completely to the top. Repeat until all mixture is gone.
- Add all frosting ingredients into a high speed blender; leaving the coconut water out.
- Begin blending and adding coconut water as needed to create a thick frosting. If your frosting gets too runny, add either more cashews or coconut oil, re-blend and set in the fridge.
- Top your cupcakes with frosting, either with a spoon or using a piping bag.
- That’s it! Enjoy!
