Are you someone who eats eggs and is currently frustrated with the increase in egg prices? Maybe your wondering what other options you have. Maybe you’ve wanted to reduce the amount of eggs you eat and now seems like the perfect time, but you’re wondering what to eat as a replacement.
Here are 3 foods that replace eggs
Flaxseeds – Chia Seeds – Tofu
( even applesauce & banana in baked goods but that’s for a different day )
Before I go into detail about each one of these here are some stats on eggs and why it’s a good idea to replace them in your diet whether it’s because of a high price at the grocery store or not.
Zero fiber ( fiber is very important for a health gut )
70% calories from fat – yikes!
Cholesterol – 213 ml per egg – that’s a lot!
1.5 eggs per week = increased risk by 5x for colon cancer – International Journal of Cancer & WHO
Linked to developing prostrate cancer – increased risk by 81% – National Institute of Health
Increased risk for diabetes by 68% – Physicians Health Journal
25% increased risk of death when consuming 7+ eggs per week – Physicians Health Journal
Salmonella – leading cause of food borne illness
1 egg a day = significantly higher all cause mortality risk = may shorten your lifespan! Harvard Physicians Health Study
So now what!?
Switch to Flaxseeds, Chia Seeds, and Tofu.
You can make the equivalent of an egg with 3 tbsp water mixed with 1 tbsp ground flaxseeds. Combine these two together, stir well, let sit for a few minutes and it will gel up.
Same goes for chia seeds. 3 tbsp water plus 1 tbsp whole or ground chia seeds does the same thing.
Both of these work wonderfully in baked goods that call for an egg. Use either of these 1:1

What about scrambled eggs?
Tofu!!
I refused to touch tofu. I had a negative experience with it when I was in 4th grade. It wasn’t until I was 29 that I finally tested the waters again. And I am so glad I did!!!!!
Here is a wonderful Tofu Scramble recipe you can try.
I hope you enjoy!
